APPLE CINNAMON TREATS FOR DIABETICS
Servings Ingredients;
1 cup white all purpose flour
1/4 tsp salt
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/2 cup brown sugar
1 cup Oats, rolled, based value
1/2 cup Shortening, vegetable
4 medium apples
Directions:
1 Preheat the oven to 350 degrees F.
2 Put the flour, salt, baking soda, cinnamon, brown sugar, and oats in the mixing bowl. Stir together.
3 Add the shortening to the bowl. Use two table knives to mix the ingredients and cut them into crumbs.
4 Lightly grease the bottom and sides of the baking dish with a little bit of shortening.
5 Spread half of the crumb mixture in the greased baking dish.
6 Remove the core from the apples and slice them. Put the apple slices into the baking dish.
7 Top the apples with the rest of the crumb mixture.
8 Bake in the oven for 40 to 45 minutes.
9 Cut into squares. It will fall apart easily.
Additional Information
Use applesauce (16 ounces) or canned apples in place of fresh apples. You can also use either peeled or unpeeled apple...

FRIED BREAD (ONE OF MANY WAYS)
4 CUPS OF FLOUR
ABOUT A FOURTH CUP OF SUGAR
ABOUT A FOURTH CUP OF BAKING POWEDER
PINCH OF SALT
MIX THE DRY INGREDIENTS TOGETHER.
START TO POUR IN REALLY WARM (BUT NOT HOT) WATER INTO MIXTURE
MAKE SURE THE DOUGH IS STICKY, THEN ADD SMALL AMOUNTS OF FLOUR IN, UNTIL YOU GET A NICE SOFT BALL OF DOUGH. COVER WITH A TOWEL AND LET RISE (THE LONGER THE BETTER)
AFTER ABOUT AN HOUR OR SO, HEAT OIL IN A FRYING PAN (CAST IRON WORKS BEST), AND TEST A SMALL PIECE OF DOUGH TO SEE IF GREASE IS HOT ENOUGH
POUR SOME OIL IN THE BOWL WITH THE DOUGH, AND CUT A PIECE OFF THE DOUGH, MAKE SURE DOUGH IS WELL OILED, STRETCH OUT DOUGH, PUT A HOLE IN THE MIDDLE, AND GENTLY PLACE IN THE HOT OIL
WATCH CLOSELY, AND WHEN ONE SIDE LOOKS GOLDEN BROWN, TURN THE PIECE OVER AND FRY UNTIL IT IS GOLDEN BROWN, ALSO
PLACE FRIED BREAD ON PLATE/PLATTER WITH A PAPER TOWEL ON IT TO COOL

Traditional Berry Pudding (Warning: Do Not Eat Without FryBread!:)
Ingredients:
4-5 cups of berries - most people like blueberries.
½ cup water
Sugar, Honey or Maple Sugar to Taste and for those not happy with too much sugar in their food, use a substitute. I live Stevia. (hmmmmm and mmmmmmm)
Cornstarch or Flour mixed in cold water first. Depending on what consistency you like, I prefer flour.
Directions:
Place your blueberries in a large pot on the stove. I love mine whole, some people like their smashed. Eventually, as you begin to cook it makes up its own mind. Add sugar or sweetener to your berries and let your berries simmer for about 15 minutes. On the side, add your flour (cornstarch) and cold water. I usually add one tablespoon cornstarch to one cup of cold water. If you are using flour, you might double the flour. Slowly add your thickener to your berries. Let this mixture simmer for an additional 10 minutes or so. Take off the stove and serve. Some like to have this served warm. If you are at a traditional meal, you might serve it warm, but it might be awhile before it is served:) In any case, you will always see some happy faces when bringing it to the event or table.
